Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
In a blender or food processor, combine cottage cheese, eggs, cheddar cheese, chives, salt, and pepper. Blend until smooth.
Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 25-30 minutes, or until the egg bites are set and slightly golden.
Let cool in the muffin tin for a few minutes before serving.
Notes
These egg bites are great for meal prepping. Store leftovers in the refrigerator for up to 4 days.
