Cottage Cheese Egg Bites

These creamy cottage cheese egg bites are the perfect make-ahead breakfast. They're packed with protein and easy to customize with your favorite mix-ins.

  • 1.5 cup Large curd cottage cheese
  • 6 large Eggs
  • 0.25 cup Shredded cheddar cheese
  • 0.25 cup Chopped chives
  • 0.125 teaspoon Salt
  • 0.125 teaspoon Black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  • In a blender or food processor, combine cottage cheese, eggs, cheddar cheese, chives, salt, and pepper. Blend until smooth.
  • Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 25-30 minutes, or until the egg bites are set and slightly golden.
  • Let cool in the muffin tin for a few minutes before serving.

Notes

These egg bites are great for meal prepping. Store leftovers in the refrigerator for up to 4 days.
