Cowboy Caviar Pasta Salad

A vibrant and flavorful pasta salad featuring black-eyed peas, corn, red onion, bell peppers, and a zesty lime dressing. Perfect for potlucks or a light summer meal.

  • 1 pound Pasta (rotini, farfalle, or your favorite shape)
  • 1 cup Black-eyed peas, canned and rinsed
  • 1 cup Corn, canned or frozen
  • 0.5 cup Red onion, finely chopped
  • 1 bell pepper Bell pepper (any color), chopped
  • 0.25 cup Cilantro, chopped

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine cooked pasta, black-eyed peas, corn, red onion, bell pepper, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  • Pour dressing over pasta mixture and toss to combine.
  • Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Feel free to add other vegetables, such as diced tomatoes, avocado, or jalapeños. You can also adjust the amount of lime juice to your liking.
