This Cowboy Pasta Salad is a hearty and flavorful dish, perfect for potlucks or a quick weeknight meal. It's loaded with pasta, black beans, corn, bell peppers, and a zesty dressing.

  • 8 oz rotini pasta
  • 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup red bell pepper, chopped
  • 1 cup yellow bell pepper, chopped
  • 0.5 cup red onion, chopped
  • 0.5 cup cilantro, chopped
  • cup shredded cheddar cheese optional

Dressing

  • 0.5 cup ranch dressing
  • 0.25 cup Italian dressing
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta, black beans, corn, bell peppers, red onion, and cilantro.
  • In a small bowl, whisk together the ranch dressing, Italian dressing, chili powder, cumin, salt, and pepper.
  • Pour the dressing over the pasta salad and toss to combine.
  • If desired, add shredded cheddar cheese and mix. Serve immediately or chill for later.
