This Cowboy Pasta Salad is a hearty and flavorful dish, perfect for potlucks, picnics, or a quick weeknight meal. It's packed with pasta, black beans, corn, bell peppers, and a creamy, zesty dressing.

  • 8 oz Pasta (rotini or similar)
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn, cooked or canned (drained)
  • 1 cup Bell pepper (various colors), diced
  • 0.5 cup Red onion, diced
  • 0.25 cup Cilantro, chopped
  • 0.5 cup Ranch dressing
  • 0.25 cup Salsa Your favorite brand
  • 0.25 cup Shredded cheddar cheese

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, combine cooked pasta, black beans, corn, bell peppers, red onion, and cilantro.
  • In a small bowl, whisk together ranch dressing and salsa.
  • Pour dressing over pasta salad and toss to combine.
  • Stir in shredded cheddar cheese.
  • Serve immediately or chill for later.

Notes

This salad is great for meal prepping! You can make it ahead of time and store it in the refrigerator for up to 3 days. Feel free to add cooked chicken or ground beef for extra protein.
