Instructions
Preparation Steps
Melt butter in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
Stir in flour and cook for 1 minute, stirring constantly.
Gradually whisk in chicken broth until smooth. Bring to a simmer.
Add shredded chicken, salt, and pepper. Simmer for 15 minutes.
Stir in heavy cream and heat through. Do not boil.
Serve hot.
Notes
Garnish with fresh parsley, if desired.
