Creamy Chicken Barley Soup

This creamy chicken barley soup is the ultimate comfort food, packed with tender chicken, chewy barley, and a rich, flavorful broth. It's perfect for a chilly evening!

  • 1.5 lbs Boneless, skinless chicken breasts
  • 0.5 cup Pearl barley
  • 1 large Onion diced
  • 2 stalks Celery diced
  • 2 carrots Carrots diced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black pepper or to taste

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes.
  • Add chicken and cook until browned on all sides. Season with salt, pepper, and thyme.
  • Pour in chicken broth and add barley. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until barley is tender.
  • Remove chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
  • Stir in heavy cream and heat through. Season with additional salt and pepper to taste.
  • Serve hot and enjoy!

Notes

Feel free to add other vegetables like mushrooms or potatoes. Garnish with fresh parsley for extra flavor.
