Instructions
Preparation Steps
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrots and cook until softened, about 5-7 minutes.
Add chicken and cook until browned on all sides. Season with salt, pepper, and thyme.
Pour in chicken broth and add barley. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until barley is tender.
Remove chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
Stir in heavy cream and heat through. Season with additional salt and pepper to taste.
Serve hot and enjoy!

Feel free to add other vegetables like mushrooms or potatoes. Garnish with fresh parsley for extra flavor.
