  • 1.5 lbs Chicken breasts boneless, skinless
  • 2 tablespoons Olive oil
  • 0.5 cup Chicken broth low sodium
  • 1 cup Heavy cream
  • 0.25 cup Lemon juice freshly squeezed
  • 2 cloves Garlic minced
  • 0.25 cup Parmesan cheese grated
  • 1 tablespoon Fresh parsley chopped
  • to taste Salt and pepper

Preparation Steps

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken breasts for 5-7 minutes per side, until golden brown and cooked through.
  • Remove chicken from skillet and set aside.
  • Add minced garlic to the skillet and cook for 30 seconds, until fragrant.
  • Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  • Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  • Return chicken to the skillet and simmer in the sauce for 2-3 minutes, until heated through.
  • Garnish with fresh parsley and serve.

Notes

Serve with a side of pasta, rice, or vegetables for a complete meal.
