Crock Pot Santa Fe Chicken

A delicious and easy slow cooker recipe featuring tender shredded chicken with corn, black beans, diced tomatoes, and a blend of Mexican-inspired seasonings. Perfect for a weeknight meal or meal prep.

  • 1.5 lbs chicken breast
  • 14.4 oz diced tomatoes with mild green chilies canned
  • 15 oz black beans rinsed and drained, canned
  • 8 oz frozen corn
  • 0.25 cup fresh cilantro chopped
  • 14.4 oz chicken broth canned
  • 3 scallions chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper to taste
  • salt to taste

Instructions
 

Preparation Steps

  • Combine chicken broth, beans (drained), corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt in the slow cooker.
  • Season chicken breast with salt and lay on top.
  • Cook on low for 8 - 10 hours or on high for 4 to 6 hours.
  • Thirty minutes before serving, remove chicken and shred.
  • Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste.
  • Serve over rice or tortillas and with your favorite toppings.

Notes

This recipe is incredibly versatile! Feel free to adjust the spice level to your liking or add other vegetables such as bell peppers or onions. It's also great for meal prepping and can be frozen for later.
