Crockpot Potato Soup

This Crockpot Potato Soup is creamy, cheesy, and packed with flavor! It's a comforting, easy meal perfect for a cold day. Simply toss everything in the slow cooker and enjoy!

  • 6 cups Russet Potatoes, peeled and cubed
  • 1 cup Chopped Onion
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 cup Shredded Carrots
  • 1 cup Heavy Cream
  • 1 cup Shredded Cheddar Cheese
  • 0.5 cup Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Place potatoes, onion, garlic, chicken broth, carrots, butter, salt, and pepper into a slow cooker.
  • Cook on low for 6 hours or on high for 3 hours, or until potatoes are tender.
  • In the last 30 minutes, stir in heavy cream and half of the cheddar cheese. Cook until cheese is melted.
  • Serve hot, topped with remaining cheddar cheese.

Notes

Garnish with chopped chives or bacon for extra flavor!
