Add the apple cider, brown sugar, cinnamon stick, ginger, and nutmeg into a small saucepan. Cook over medium heat, stirring until the sugars dissolve completely.
Once dissolved, add the fresh cranberries and increase heat until the mixture boils.
Reduce heat to a simmer and cook for about 10 minutes, or until all cranberries have popped and the sauce thickens.
Remove from heat and let cool before using.
Baked Brie
Preheat oven to 350°F (175°C).
Place the brie wheel in a shallow baking dish. Make a few slits in the top rind to help it melt evenly.
Top the brie generously with the prepared cranberry sauce.
Bake in the preheated oven for 15 minutes, or until the cheese is soft and slightly melted.
Remove from oven and drizzle honey over the warm brie. Sprinkle with chopped walnuts if desired.
Serve immediately with crackers or crusty bread.
