Eclair Cake Recipe

This Eclair Cake is an easy no-bake dessert that tastes just like cream puffs! It's made with graham crackers, vanilla pudding, and a rich chocolate frosting.

Ingredients
  

Main Ingredients

  • 1 box Graham Crackers Regular size
  • 2 boxes Vanilla Instant Pudding 3.4 oz boxes
  • 3 cups Milk Cold milk
  • 1 container Whipped Topping 8 oz container, thawed

Frosting

  • 1 cup Semi-Sweet Chocolate Chips
  • 1 cup Heavy Cream

Preparation Steps

  • In a large bowl, whisk together the pudding mixes and milk until smooth. Gently fold in the whipped topping.
  • Line the bottom of a 9x13 inch baking dish with a layer of graham crackers. You may need to break some to fit.
  • Spread half of the pudding mixture evenly over the graham crackers. Add another layer of graham crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
  • In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  • Pour the chocolate frosting over the top layer of graham crackers. Spread evenly.
  • Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the graham crackers to soften.
