Egg Fried Rice

A quick and easy egg fried rice recipe, perfect for a weeknight meal. This recipe is packed with flavor and comes together in under 30 minutes!

  • 2 tablespoons vegetable oil
  • 0.5 cup diced onion
  • 1 cup cooked rice chilled
  • 2 large eggs
  • 2 tablespoons soy sauce
  • 1 cup frozen peas and carrots

Instructions
 

Preparation Steps

  • Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
  • Scramble the eggs in the skillet until cooked, then remove and set aside.
  • Add the remaining oil to the skillet and cook the onions and peas and carrots until softened.
  • Add the rice and soy sauce to the skillet and cook, stirring, until heated through and the rice is lightly browned.
  • Stir in the scrambled eggs and serve immediately.

Notes

Feel free to add cooked chicken or shrimp for extra protein.
