Instructions
Preparation Steps
Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.
Scramble the eggs in the skillet until cooked, then remove and set aside.
Add the remaining oil to the skillet and cook the onions and peas and carrots until softened.
Add the rice and soy sauce to the skillet and cook, stirring, until heated through and the rice is lightly browned.
Stir in the scrambled eggs and serve immediately.
Notes
Feel free to add cooked chicken or shrimp for extra protein.
