These decadent eggnog truffles are the perfect festive treat! Creamy eggnog ganache coated in a rich chocolate shell. Easy to make and always a crowd-pleaser.
In a heatproof bowl set over a saucepan of simmering water (or in the microwave), melt the chocolate chips. Stir until smooth.
Heat the heavy cream and eggnog in a small saucepan over medium heat until simmering. Remove from heat and stir in the nutmeg.
Pour the warm eggnog mixture over the melted chocolate and stir until smooth and glossy. Refrigerate for at least 2 hours, or until firm enough to roll.
Using a small scoop or spoon, roll the chocolate mixture into 1-inch balls. Place on a parchment-lined baking sheet and refrigerate for another 30 minutes.
Melt the chocolate wafers according to package directions. Dip each truffle into the melted chocolate, coating completely. Place back on the parchment paper to set.
Let the truffles set completely before serving.

For an extra touch, sprinkle with a dash of nutmeg or a sprinkle of edible gold dust before the chocolate sets.
