Ingredients
  

  • 10 large flour tortillas
  • 10 large eggs
  • 1 lb 0.45 kg breakfast sausage (or bacon)
  • 1 cup 0.25 lb shredded cheddar or Mexican blend cheese
  • 1 bell pepper 0.3 lb, diced
  • 1 small onion 0.25 lb, diced
  • 2 tablespoons 0.1 lb butter or olive oil
  • Salt and black pepper to taste
  • Cooking spray

Optional Add-Ins:

  • Salsa or hot sauce
  • Avocado slices
  • Hash browns

Step 1: Cook the Sausage and Vegetables

  • Heat 1 tablespoon of butter or oil in a skillet over medium heat.
  • Add the sausage and cook for 5–6 minutes, breaking it apart until browned. Remove and set aside.
  • In the same skillet, add the remaining butter and sauté the diced onion and bell pepper for 3–4 minutes, or until softened.

Step 2: Scramble the Eggs

  • In a bowl, whisk the eggs with a pinch of salt and pepper.
  • Pour the eggs into the skillet with the vegetables and cook, stirring frequently, until soft and fluffy. Remove from heat.

Step 3: Assemble the Burritos

  • Lay out the tortillas on a clean surface.
  • Divide the scrambled eggs, sausage, and shredded cheese evenly among the tortillas. Add any optional ingredients, like salsa or avocado.
  • Fold the sides of each tortilla inward, then roll it tightly from the bottom up to form a burrito.

Step 4: Freeze the Burritos

  • Wrap each burrito individually in foil or plastic wrap. Place the wrapped burritos in a freezer-safe bag or airtight container.

Step 5: Reheat and Serve To reheat:

  • Microwave: Remove foil and wrap the burrito in a damp paper towel. Microwave for 1–2 minutes, or until heated through.
  • Oven: Place the burrito in the oven at 350°F (175°C) for 15–20 minutes.
