Preparation Steps
Preheat oven to 350°F (175°C).
Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie plate.
Bake for 10-12 minutes, or until lightly golden.
Melt chocolate in a double boiler or microwave. Set aside to cool slightly.
In a separate bowl, beat powdered sugar and heavy cream until soft peaks form.
In another bowl, whisk together eggs and vanilla extract.
Gradually add the melted chocolate to the whipped cream, mixing until smooth.
Gently fold in the egg mixture.
Pour the filling into the baked pie crust.
Refrigerate for at least 4 hours, or preferably overnight, before serving.
Notes
For a richer flavor, use dark chocolate instead of semi-sweet. Garnish with whipped cream and chocolate shavings before serving.
