Instructions
Preparation Steps
Heat oil in a large skillet or wok over medium-high heat. Add diced onions and cook until softened.
Add diced vegetables and cook until slightly tender, about 2-3 minutes.
Push the vegetables to one side of the skillet. Pour in the beaten eggs and scramble until cooked.
Add the cooked rice and soy sauce to the skillet. Stir-fry everything together until well combined and heated through.
Drizzle with sesame oil and serve hot.
