Gluten-Free Banana Cake

This gluten-free banana cake is moist, delicious, and easy to make! It's the perfect way to use up ripe bananas.

  • 3 medium Ripe bananas
  • 0.75 cup Granulated sugar
  • 0.5 cup Unsalted butter melted
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1.75 cup Gluten-free all-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mash the bananas. Add the sugar and melted butter and mix well.
  • Beat in the eggs and vanilla extract.
  • In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
