Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a large bowl, whisk together the flour and baking powder.
  • In another bowl, beat the sugar and eggs until pale and fluffy. Slowly add olive oil, orange juice, and vanilla extract, mixing well.
  • Combine the dry ingredients with the wet ingredients, stirring until just combined. Fold in the orange zest.
  • Pour the batter into the prepared baking dish and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
