Preparation Steps
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
In a large bowl, whisk together the flour and baking powder.
In another bowl, beat the sugar and eggs until pale and fluffy. Slowly add olive oil, orange juice, and vanilla extract, mixing well.
Combine the dry ingredients with the wet ingredients, stirring until just combined. Fold in the orange zest.
Pour the batter into the prepared baking dish and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
