Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
In a large bowl, combine potatoes, olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper. Toss well to coat.
Spread potatoes in a single layer on a baking sheet.
Roast for 45-50 minutes, or until potatoes are golden brown and tender, flipping halfway through.
Serve immediately.
Notes
For extra crispy potatoes, you can boil them for 5 minutes before roasting.
