Greek Roast Potatoes

Crispy and flavorful Greek roast potatoes with lemon, garlic, and herbs.

  • 2.5 lbs Yukon Gold potatoes Peeled and cut into 1-inch chunks
  • 0.5 cup Olive oil Extra virgin
  • 0.25 cup Lemon juice Freshly squeezed
  • 4 cloves Garlic Minced
  • 2 tsp Dried oregano
  • 1 tsp Dried rosemary
  • 1 tsp Salt To taste
  • 0.5 tsp Black pepper To taste

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine potatoes, olive oil, lemon juice, garlic, oregano, rosemary, salt, and pepper. Toss well to coat.
  • Spread potatoes in a single layer on a baking sheet.
  • Roast for 45-50 minutes, or until potatoes are golden brown and tender, flipping halfway through.
  • Serve immediately.

Notes

For extra crispy potatoes, you can boil them for 5 minutes before roasting.
