grilled chicken pizza

This grilled chicken pizza features a crispy flatbread base topped with creamy cheese, tender shredded chicken, mushrooms, and red onions for a perfect grilled meal.

  • 1 package refrigerated pizza dough
  • 4 oz cream cheese
  • 1.33 cup part-skim shredded mozzarella cheese divided
  • 1 small red onion sliced
  • 4 oz cooked grilled chicken breast shredded
  • 1 cup sliced mushrooms
  • 1 tbsp olive oil for brushing grill and dough

Preparation Steps

  • Preheat the grill to high heat.
  • Prepare dough on a lightly floured surface and shape it into a flat pizza base.
  • Brush the hot grill grates with olive oil to prevent sticking.
  • Slide the pizza dough directly onto the grill and close the lid. Grill dough for 2 to 3 minutes until the bottom is browned.
  • Check dough for even browning and grill for an additional minute if needed.
  • Remove dough from grill with tongs and place it back on a flat surface with the browned side facing up.
  • Brush the top of the dough with olive oil and spread cream cheese over the surface.
  • Layer 1 cup mozzarella cheese, sliced red onions, shredded chicken, and mushrooms evenly over the cream cheese.
  • Sprinkle the remaining mozzarella cheese on top of the toppings.
  • Place the pizza back on the grill, reduce heat to medium-high, and close the lid.
  • Grill the pizza for 3 to 4 minutes until the cheese is melted and bubbly.
  • Remove pizza from grill and let it rest for a minute before slicing and serving.

Notes

For a smoky flavor, try using smoked mozzarella or adding fresh herbs like basil after grilling.
