  • 6 large eggs
  • 0.5 cup diced ham preferably smoked
  • 0.25 cup shredded cheddar cheese
  • 0.25 cup milk whole milk recommended
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Preparation Steps

  • Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper.
  • Stir in the diced ham and shredded cheddar cheese.
  • Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake for 20 minutes or until the egg muffins are fully set and slightly golden on top.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

These muffins can be stored in the refrigerator for up to a week. Reheat them in a microwave before serving.
