  • 2 tablespoons vegetable oil
  • 1 cup zucchini, sliced
  • 1 cup mushrooms, sliced
  • 1 cup carrots, julienned
  • 2 tablespoons soy sauce low sodium

Preparation Steps

  • Heat oil in a large skillet over medium-high heat.
  • Add zucchini, mushrooms, and carrots, and stir fry for 5-7 minutes.
  • Add soy sauce and stir well to coat the vegetables. Cook for another 2 minutes.

Notes

For added flavor, garnish with sesame seeds before serving.
