Honey Butter Cornbread Poppers

These bite-sized Honey Butter Cornbread Poppers are the perfect combination of sweet and savory! Crispy on the outside, soft and fluffy on the inside, and bursting with delicious cornbread flavor. They're quick to make and disappear even faster!

  • 1.5 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.25 cup buttermilk
  • 0.25 cup unsalted butter melted
  • 1 large egg
  • 0.25 cup honey
  • 4 tablespoons unsalted butter melted, for brushing

Preparation Steps

  • Preheat oven to 400°F (200°C) and grease a mini muffin tin.
  • In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, melted butter, egg, and honey.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Fill each mini muffin cup about 2/3 full.
  • Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Remove from oven and brush the tops with melted butter.
  • Let cool slightly before serving.

Notes

Serve these poppers warm with a drizzle of extra honey or a dollop of butter. They are delicious on their own or alongside chili, soups, or stews!
