Hungarian Mushroom Soup

This Hungarian Mushroom Soup is a creamy, flavorful soup with a hint of paprika.

  • 1 pound mushrooms sliced
  • 2 tablespoons olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons paprika
  • 4 cups vegetable broth
  • 1 cup sour cream
  • 2 tablespoons flour all-purpose
  • 2 tablespoons dill chopped, fresh

Instructions
 

Preparation Steps

  • Heat the olive oil in a large pot over medium heat. Add the onions and garlic and sauté until the onions are translucent.
  • Add the mushrooms and paprika to the pot and cook for about 5 minutes.
  • Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  • In a small bowl, mix the flour with sour cream and dill. Add to the pot and stir well. Cook for another 5 minutes.

Notes

For a richer flavor, use a mix of different types of mushrooms.
