Preparation Steps
Core and chop the apples into small pieces. Place them in a 6-quart Instant Pot.
In a small bowl, combine the brown sugar, granulated sugar, cinnamon, ground cloves, and salt. Stir to combine. Pour the mixture over the apples and mix well to coat the apples.
Place the lid on the Instant Pot and set to manual or pressure cook on high pressure for 90 minutes. Allow for 10 minutes of natural release before manually releasing any remaining pressure.
Use an immersion blender to puree the apple mixture until completely smooth.
Turn the Instant Pot to sauté and allow the apple mixture to reduce, stirring occasionally, until it reaches your desired consistency. This can take about 30-60 minutes.
Stir in the vanilla extract.
Spoon the apple butter into sterile glass jars and cover with a lid. Store in the refrigerator for up to 3 weeks.
