Island Pecan Pie

A delicious twist on the classic pecan pie, with a tropical island flair that comes from the addition of coconut and rum.

  • 1.5 cups pecans chopped
  • 1 cup corn syrup light or dark
  • 0.5 cup sugar granulated
  • 0.25 cup butter melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon rum optional
  • 3 eggs beaten

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine the corn syrup, sugar, butter, eggs, vanilla, and rum. Mix until well blended.
  • Stir in the pecans.
  • Pour the mixture into a pie crust.
  • Bake in preheated oven for 50 to 55 minutes.

Notes

Let the pie cool before serving to allow the filling to set properly.
