Preparation Steps
In a medium bowl, whip the heavy cream until stiff peaks form.
In a separate small bowl, whisk together the unsweetened cocoa powder and erythritol.
Gently fold the cocoa powder mixture and vanilla extract into the whipped cream until just combined.
Fold in the melted unsweetened chocolate until no streaks remain.
Divide the mousse into serving dishes and chill in the refrigerator for at least 30 minutes before serving.
Notes
Optional: Garnish with fresh berries or a sprinkle of cocoa powder before serving.
