Lemon Arugula Pasta Salad

A refreshing pasta salad with bright lemon flavor, peppery arugula, and a touch of parmesan. Perfect for a light lunch or side dish.

  • 8 oz Pasta (rotini or similar)
  • 5 cups Arugula
  • 0.25 cup Grated Parmesan cheese
  • 0.25 cup Olive oil
  • 0.25 cup Lemon juice
  • tsp Lemon zest
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
  • Add cooked pasta, arugula, and parmesan cheese to the bowl. Toss to combine.
  • Serve immediately or chill for later.

Notes

Feel free to add grilled chicken or shrimp for extra protein.
