Lemon Bars

These easy lemon bars are the perfect balance of sweet and tart, with a buttery shortbread crust and a zesty lemon filling. They're simple to make and a crowd-pleaser!

Ingredients
  

Crust

  • 1.25 cups all-purpose flour
  • 0.25 cup powdered sugar
  • 0.5 cup unsalted butter cold, cubed

Filling

  • 1.5 cups granulated sugar
  • 0.25 cup all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.5 cup lemon juice freshly squeezed
  • 2 large eggs
  • 0.25 teaspoon lemon zest

Preparation

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • For the crust: In a food processor, pulse together flour, powdered sugar, and cold butter until mixture resembles coarse crumbs. Press into the prepared pan and bake for 15-20 minutes, or until lightly golden.
  • For the filling: Whisk together granulated sugar, flour, and baking powder. Add lemon juice, eggs, and lemon zest; whisk until smooth.
  • Pour the filling over the warm crust and bake for 20-25 minutes, or until the filling is set.
  • Let cool completely before dusting with powdered sugar and cutting into bars.

Notes

For extra flavor, use Meyer lemons. Store lemon bars in the refrigerator.
