  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 2 medium zucchinis, sliced
  • 2 cloves garlic, minced
  • 0.25 cup fresh basil, chopped
  • 0.5 cup vegetable broth
  • 0.25 cup parmesan cheese, grated
  • 0.25 cup lemon juice

Preparation Steps

  • Cook the gnocchi according to package directions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add zucchini and cook until softened, about 5-7 minutes.
  • Add minced garlic and cook for 1 minute more, until fragrant.
  • Stir in basil, vegetable broth, parmesan cheese, and lemon juice. Season with salt and pepper to taste.
  • Add the cooked gnocchi to the sauce and toss to combine.
  • Serve immediately, garnished with extra parmesan cheese, if desired.

Notes

For a creamier sauce, add a splash of heavy cream or a dollop of mascarpone cheese. Feel free to add other vegetables like bell peppers or spinach.
