Lemon Blueberry Muffins

Delicious and moist lemon blueberry muffins perfect for breakfast or a snack.

  • 1.5 cups all-purpose flour
  • 0.33 cup sugar or more to taste
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup fresh blueberries washed and dried
  • 1 large egg beaten
  • 0.5 cup milk
  • 0.25 cup vegetable oil
  • 1 teaspoon lemon zest freshly grated

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a muffin pan with paper liners.
  • In a large bowl, mix flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the egg, milk, oil, and lemon zest.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  • Fill muffin cups 3/4 full and bake for 18-20 minutes or until a toothpick comes out clean.

Notes

These muffins taste great with a hint of butter or served warm.
