Instructions
Preparation Steps
Preheat your oven to 400°F (200°C). Line a muffin pan with paper liners.
In a large bowl, mix flour, sugar, baking powder, and salt.
In another bowl, whisk together the egg, milk, oil, and lemon zest.
Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
Fill muffin cups 3/4 full and bake for 18-20 minutes or until a toothpick comes out clean.
Notes
These muffins taste great with a hint of butter or served warm.
