  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 piece pie crust unbaked

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine sugar and flour. Add the beaten eggs and mix well.
  • Stir in the cornmeal, melted butter, lemon juice, lemon zest, vanilla extract, and pinch of salt until smooth.
  • Pour the mixture into the unbaked pie crust and smooth the top.
  • Bake in the preheated oven for about 50 minutes, or until the filling is set and the top is golden brown.
  • Allow the pie to cool completely before serving.
