Delightfully tangy and buttery lemon cookies with a crisp edge and chewy center, perfect for any occasion.

  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cups unsalted butter softened
  • 0.75 cups granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest freshly grated
  • 2 tbsp fresh lemon juice
  • 0.5 tsp vanilla extract

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, beat the softened butter and sugar together until light and fluffy.
  • Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture and mix until combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined; do not overmix.
  • Scoop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. Optionally, dust with powdered sugar before serving.
