Lentil Sausage Soup

A hearty and flavorful lentil sausage soup, perfect for a chilly evening. This recipe is easy to follow and packed with protein and vegetables.

  • 1 cup brown or green lentils
  • 1 pound Italian sausage removed from casings
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion diced onion
  • 8 cups vegetable broth
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • In a large pot or Dutch oven, brown the Italian sausage over medium heat. Remove sausage and set aside.
  • Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  • Stir in the lentils, vegetable broth, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
  • Stir in the cooked sausage and serve hot.

Notes

This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
