Instructions
Preparation Steps
In a large pot or Dutch oven, brown the Italian sausage over medium heat. Remove sausage and set aside.
Add the onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
Stir in the lentils, vegetable broth, oregano, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the lentils are tender.
Stir in the cooked sausage and serve hot.
Notes
This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
