  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup red onion, sliced
  • 1 cup bell peppers (various colors), chopped
  • 0.5 cup kalamata olives, pitted and halved
  • 0.25 cup olive oil
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine chicken, tomatoes, red onion, bell peppers, olives, olive oil, oregano, basil, garlic powder, salt, and pepper.
  • Spread the mixture in a single layer in a baking dish.
  • Bake for 45 minutes, or until chicken is cooked through and vegetables are tender.
