A refreshing and flavorful salad made with chickpeas, cucumbers, tomatoes, bell peppers, olives, and feta cheese. Perfect for a light lunch or a side dish.
In each of 4 containers or bowls, arrange 1/3 cup chickpeas, 1/2 cup cucumber, 1/4 green pepper, 1/3 cup tomato, olives and red onion, top with Feta cheese.
In a small bowl whisk the lemon juice, olive oil, oregano, salt and pepper.
Serve about 1.5 tablespoons dressing with each salad.

This salad is great for meal prepping! You can make it ahead of time and have lunches ready for the week. Adjust the ingredients to your liking - add more or less of any ingredient, or substitute with your favorites!
