A flavorful and easy Mexican-inspired pasta dish featuring pasta shells, ground beef, and a zesty tomato sauce, baked to perfection with a cheese topping.
Cook pasta shells according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic, chili powder, cumin, and oregano. Cook for 1 minute more.
Stir in diced tomatoes and tomato sauce. Simmer for 10 minutes, stirring occasionally.
Preheat oven to 375°F (190°C).
Fill each pasta shell with the meat mixture and place them in a baking dish. Sprinkle with shredded cheddar cheese.
Bake for 20 minutes, or until cheese is melted and bubbly.
Garnish with chopped cilantro and serve.
