Mexican Pasta Shells

A flavorful and easy Mexican-inspired pasta dish featuring pasta shells, ground beef, and a zesty tomato sauce, baked to perfection with a cheese topping.

Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 1 can Diced tomatoes (14.5 oz)
  • 0.5 cup Tomato sauce
  • 8 ounces Jumbo pasta shells
  • 2 cups Shredded cheddar cheese
  • 0.25 cup Chopped cilantro

Instructions
 

Preparation Steps

  • Cook pasta shells according to package directions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic, chili powder, cumin, and oregano. Cook for 1 minute more.
  • Stir in diced tomatoes and tomato sauce. Simmer for 10 minutes, stirring occasionally.
  • Preheat oven to 375°F (190°C).
  • Fill each pasta shell with the meat mixture and place them in a baking dish. Sprinkle with shredded cheddar cheese.
  • Bake for 20 minutes, or until cheese is melted and bubbly.
  • Garnish with chopped cilantro and serve.

Notes

Serve with a side of sour cream and your favorite Mexican toppings.
