Mexican Tortilla Casserole

A delicious and easy Mexican Tortilla Casserole, perfect for a quick weeknight dinner. Layers of tortillas, seasoned ground beef, cheese, and a flavorful sauce make this a family favorite!

  • 1 lb Ground Beef Lean ground beef
  • 1 packet Taco Seasoning
  • 1 can Diced Tomatoes 14.5 oz can
  • 1 can Black Beans 15 oz can, drained and rinsed
  • 1 can Corn 15 oz can, drained
  • 10 oz Tortilla Chips Crushed
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Sour Cream For topping (optional)

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large skillet, brown ground beef over medium heat. Drain excess grease.

  • Stir in taco seasoning, diced tomatoes, black beans, and corn. Simmer for 5 minutes.

  • In the prepared baking dish, layer tortilla chips, meat mixture, and cheese. Repeat layers until all ingredients are used, ending with cheese on top.

  • Bake for 20-25 minutes, or until cheese is melted and bubbly.
  • Let cool slightly before serving. Top with sour cream, if desired.

Notes

This casserole is easily customizable. Feel free to add other vegetables or use different types of cheese. For a spicier kick, add a can of diced green chilies.
