No Peek Chicken Casserole

A comforting and easy chicken casserole recipe that requires no peeking while baking! Layers of chicken, rice, and creamy soup create a delicious and simple meal.

Main Ingredients

  • 1.5 lbs Boneless, skinless chicken breasts
  • 1 cup Uncooked long-grain rice
  • 1 can Cream of chicken soup (10.75 oz)
  • 1 can Cream of mushroom soup (10.75 oz)
  • 1 cup Water
  • 0.5 cup Onion, chopped
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Place chicken breasts in a 9x13 inch baking dish.
  • Sprinkle with salt and pepper.
  • In a bowl, mix together rice, cream of chicken soup, cream of mushroom soup, water, and chopped onion.
  • Pour the soup mixture over the chicken.
  • Cover the baking dish tightly with aluminum foil.
  • Bake for 60 minutes, or until chicken is cooked through and rice is tender. DO NOT PEEK!
  • Let stand for 5-10 minutes before serving.

Notes

Serve hot. Garnish with fresh parsley, if desired.
