Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
In a large bowl, toss broccoli, carrots, and red onion with olive oil, thyme, rosemary, salt, and pepper.
Spread vegetables in a single layer on a baking sheet.
Roast for 30 minutes, or until vegetables are tender and slightly browned, flipping halfway through.
Notes
Serve hot. Great with a drizzle of balsamic glaze.
