Oven Roasted Vegetables

A simple and delicious recipe for oven roasted vegetables. Perfect as a side dish or a vegetarian main course.

  • 1 lb Broccoli florets
  • 1 lb Carrots, peeled and chopped
  • 0.5 lb Red onion, cut into wedges
  • 1 tbsp Olive oil
  • 0.5 tsp Dried thyme
  • 0.5 tsp Dried rosemary
  • 0.25 tsp Salt
  • 0.125 tsp Black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss broccoli, carrots, and red onion with olive oil, thyme, rosemary, salt, and pepper.
  • Spread vegetables in a single layer on a baking sheet.
  • Roast for 30 minutes, or until vegetables are tender and slightly browned, flipping halfway through.

Notes

Serve hot. Great with a drizzle of balsamic glaze.
