Instructions
Preparation Steps
Cook rice noodles according to package directions. Drain and set aside.
In a small bowl, whisk together tamarind paste, fish sauce, soy sauce, and brown sugar.
Heat vegetable oil in a wok or large skillet over medium-high heat. Add garlic and cook until fragrant, about 30 seconds.
Add shrimp and cook until heated through.
Push shrimp to one side of the wok and pour in the beaten eggs. Scramble the eggs until cooked.
Add cooked noodles and the sauce mixture to the wok. Toss to combine.
Stir in bean sprouts and chopped peanuts. Cook for 1-2 minutes, until heated through.
Garnish with green onions and serve with lime wedges.
