  • 0.5 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar packed
  • 1 cup Milk
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 4 cups Fresh peaches peeled and diced
  • 0.25 cup Butter melted
  • 0.25 cup Granulated sugar for topping
  • 0.5 teaspoon Cinnamon for topping

Preparation Steps

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  • In a separate bowl, whisk together granulated sugar, brown sugar, milk, oil, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the diced peaches.
  • Fill each muffin liner about 2/3 full.
  • In a small bowl, combine melted butter, granulated sugar, and cinnamon. Sprinkle over the muffins.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
