Peanut Butter Cowboy Cookies

Chewy peanut butter cookies loaded with oats, chocolate chips, and butterscotch chips!

  • 1 cup peanut butter
  • 0.5 cup packed brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, cream together the peanut butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Stir in the oats, chocolate chips, and butterscotch chips.
  • Drop by rounded tablespoons onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until golden brown.
  • Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week.
