These pistachio cookie bars are a delightful treat, combining the buttery goodness of a cookie with the convenience of a bar. They're perfect for a party or a simple dessert.

  • 1.5 cups All-purpose flour
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.75 cup Unsalted butter, softened
  • 0.75 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 teaspoon Vanilla extract
  • 1 cup Pistachios, chopped
  • 0.5 cup White chocolate chips

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in vanilla extract.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined. Stir in pistachios and white chocolate chips.
  • Press dough evenly into prepared pan.
  • Bake for 20-25 minutes, or until golden brown.
  • Let cool completely before cutting into bars.

Notes

For best results, allow the bars to cool completely before cutting. Store in an airtight container at room temperature.
