Pistachio Shortbread Cookies

  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract pure
  • 0.25 tsp salt
  • 2 cups all-purpose flour
  • 0.75 cup pistachios chopped

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  • Add vanilla extract and salt, and mix until combined.
  • Gradually add flour and mix until the dough comes together.
  • Fold in the chopped pistachios.
  • Roll the dough into small balls and place them on the prepared baking sheet.
  • Flatten each ball gently with the back of a spoon.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Store in an airtight container for up to a week.
