Pork Chops and Rice Casserole

Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
Season pork chops with salt and pepper.
In a large oven-safe skillet or Dutch oven, brown the pork chops on both sides over medium-high heat. Remove and set aside.
Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
Stir in rice, thyme, salt, and pepper.
Pour in chicken broth and bring to a simmer.
Place the pork chops on top of the rice mixture.
Cover and bake for 40-45 minutes, or until the rice is tender and the pork chops are cooked through (internal temperature of 145°F / 63°C).
Let stand for 5 minutes before serving.
Notes
Serve with a side of green beans or a fresh salad.
