Instructions
Preparation Steps
In a large pot or Dutch oven, brown the sausage slices over medium-high heat. Remove the sausage and set aside.
Add olive oil to the pot. Sauté the onion until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
Stir in the heavy cream, salt, and pepper. Return the sausage to the pot and heat through.
Serve hot, garnished with shredded cheddar cheese and fresh parsley.

This chowder is even better the next day! Store leftovers in the refrigerator for up to 3 days.
