Potato Soup Recipe

This creamy and comforting potato soup recipe is easy to make and perfect for a chilly day. It's loaded with tender potatoes, vegetables, and a rich, flavorful broth. This recipe is a family favorite!

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 6 cups peeled and cubed Yukon Gold potatoes
  • 4 cups chicken broth
  • 1 cup milk
  • 0.5 cup heavy cream
  • 0.25 cup chopped fresh chives, plus more for garnish
  • salt and pepper, to taste

Preparation Steps

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the garlic and cook for 1 minute more.
  • Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  • Carefully transfer the soup to a blender or use an immersion blender to blend until smooth. Return the soup to the pot.
  • Stir in the milk, heavy cream, and chives. Season with salt and pepper to taste. Heat through, but do not boil.
  • Serve hot, garnished with extra chives.

Notes

For a thicker soup, add more potatoes. For a thinner soup, add more broth. You can also add other vegetables like carrots or celery.
