Instructions
Preparation Steps
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute more.
Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
Carefully transfer the soup to a blender or use an immersion blender to blend until smooth. Return the soup to the pot.
Stir in the milk, heavy cream, and chives. Season with salt and pepper to taste. Heat through, but do not boil.
Serve hot, garnished with extra chives.
Notes
For a thicker soup, add more potatoes. For a thinner soup, add more broth. You can also add other vegetables like carrots or celery.
