Pumpkin Pie

This classic pumpkin pie recipe is perfect for Thanksgiving or any fall gathering. It's creamy, spiced, and delicious!

Ingredients
  

Crust

  • 1.25 cup all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 cup cold unsalted butter, cubed
  • 0.25 cup ice water

Filling

  • 1.5 cup pumpkin puree
  • 1 cup evaporated milk
  • 0.75 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 0.75 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 2 large eggs

Instructions
 

Make the Crust

  • In a bowl, whisk together flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Gradually add ice water, mixing until the dough comes together. Form into a disc, wrap in plastic, and chill for at least 30 minutes.
  • Roll out the dough and place in a 9-inch pie plate. Crimp the edges.

Make the Filling

  • In a large bowl, whisk together pumpkin puree, evaporated milk, sugars, spices, and salt.
  • Whisk in the eggs until combined.
  • Pour the filling into the prepared pie crust.

Bake the Pie

  • Bake in a preheated oven at 425°F (220°C) for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for another 40-45 minutes, or until the filling is set.
  • Let cool completely before serving.

Notes

Serve with whipped cream for extra deliciousness!
