  • 1.75 cups all-purpose flour
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.75 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 2 large eggs
  • 0.5 cup pumpkin puree
  • 0.25 cup vegetable oil
  • 3 ripe bananas, mashed
  • 0.5 cup chopped walnuts or pecans (optional)

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  • In a separate bowl, whisk together granulated sugar, brown sugar, eggs, pumpkin puree, and oil.
  • Add the mashed bananas to the wet ingredients and mix well.
  • Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  • If using, gently fold in the chopped walnuts or pecans.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
